Chocolate Choclate Chunk Cookies

I made these today because I was having a chocolate craving and there was nothing good in the house to eat. They turned out really yummy! I used a recipe from some chocolate chip cookies and changed it up a bit.

Ingredients:
1 Cup Butter (softened)
1 Cup Sugar
1 Cup Brown Sugar
2 Eggs
2 Tsp. Vanilla
3/4 Cups Chocolate Baking Powder
2 Tsp. Baking Soda
2 Cups Flour
3 Dark Chocolate Hershey's Bars Broken Up

Directions:
Preheat oven to 375 degrees. Mix together butter, brown sugar and white sugar until creamy. Then add the eggs, vanilla, cocoa powder and stir. Next mix in the Baking soda and flour and stir until well mixed. Break up some Hershey's bars. I usually just put them in a Ziploc and pound them with the meat tenderizer. Add the broken up pieces to the cookie batter and stir until evenly mixed in. Drop spoonfuls onto baking sheet. Bake at 375 degrees for about 12 minutes. Let sit for about 5 minutes to cool and eat! Enjoy!

Taco Seasoning

If you ever find yourself wanting taco's and you don't have the little seasoning packet you can mix these ingredients together to make your own.

Ingredients:

1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

Quick and Easy Cinnamon Rolls


This recipe was inspired by Katie who posted "I smell cinnamon rolls" and my tummy started getting hungry for some. I searched the Internet for a recipe that was easy so the kids could help and fast because I am impatient and so are the kids. When I am hungry I like to eat without a bunch of fuss.

Ingredients:
1/4 plus 1 1/2 teaspoon shortening
3 cups self-rising flour
1 cup milk
1/2 cup butter or margarine softened
1/2 cup sugar (can reduce this if you like)
1/2 cup brown sugar (this can be reduced too)
1 tablespoon ground cinnamon
3/4 cup chopped pecans (optional)

Vanilla Glaze:
1 1/4 cups sifted powdered sugar
3 teaspoons Milk
1/4 teaspoon vanilla
For the glaze I mix it up and then put it into a Ziploc bag and then cut the corner and then I can just squeeze the frosting out onto the cinnamon rolls.

Directions:
Cut the shortening into flour with pastry blender until mixture resembles coarse meal. Add 1 cup milk, stirring until dry ingredients are moistened. Turn dough out onto a floured surface; knead lightly. Roll dough into a 20x14 inch rectangle; spread the softened butter on dough, leaving a border of about 1/2 inch. Combine sugar and cinnamon; mix well, and sprinkle over butter. Top with pecans if using. Beginning at long side, roll up jelly roll fashion; press edges and ends together securely. Cut into 1 inch slices; place cut side down in a buttered 13x9x2-inch baking pan. Bake at 375 degrees for 20 minutes. Combine powdered sugar and 3 tablespoons milk and vanilla. Drizzle over warm rolls. Makes 20 cinnamon rolls.

Dark Rich Fudge

This fudge is easy and so yummy! It makes a really big batch so be prepared to share some. The kids and I made this for Christmas this year to share with the grandparents.

Ingredients:

1/2 cup butter or margarine
4 1/2 cups sugar
1 (12 oz.) can evaporated milk
3 (12 oz.) packages Baker's Semi-Sweet chocolate chunks
1 (7 oz.) jar Marshmallow cream
3 cups chopped pecans
1 tsp. salt
1 tsp. vanilla

Directions:

1. Place butter, sugar and milk in heavy 4-quart saucepan. Bring to full rolling boil on medium heat, stirring constantly. Boil 5 minutes, stirring constantly to prevent scorching.

2. Remove from heat. Gradually add chocolate chunks, stirring until chocolate is completely melted after each addition. Add remaining ingredients; mix well.

3. Pour into greased 15x10x1-inch pan or a 9x13-inch pan for thicker fudge. Cool completely.
